4 C. warm water
4 t. salt
4 T. dry yeast
4 T. oil
4 heaping T. sugar or honey (Michelle uses honey)
8 C. flour (plus up to 4 C. more later)
Mix all ingredients well in large bowl (or Kitchenaid mixer with dough hook). After this is will look really wet and gooey, "oatmeal" like. Let stand for 15-20 minutes. Now it will look bubbly. Continue to mix, adding more flour until smooth and sticky (may take up to 4 more C. of flour). Dough will look like this:
Put dough onto floured board/surface. Divide into thirds. Knead each section 2 or 3 times. Shape into loaf and put into greased bread pans, seam side down, spread out with knuckles. Let it rise until it comes to top of pans (about 30 minutes). Bake at 350 for 30 minutes. After baking, brush tops with butter and cool on racks.
